ফার্মেন্টেশন প্রক্রিয়ার মাধ্যমে আজিনোমোটো বা মোনো সোডিয়াম গ্লুটামেট (এমএসজি) তৈরি করা হয়, যাতে ব্যবহার করা হয় প্রাকৃতিক উপাদান যেমন আখ বা সাবুজাতীয় শস্য। খাদ্যের স্বাদ বাড়িয়ে তোলার ক্ষমতা রাখে এমএসজি। যে জাপানিজ কোম্পানি এমএসজি তৈরি করে তার নাম আজিনোমোটো ইন্ডিয়া প্রাইভেট লিমিটেড এবং তার সদর দপ্তর জাপানে। এই কোম্পানি বিশ্বজুড়ে তার প্রোডাক্ট বিক্রি করে। প্রোডাক্টটি যে নিরাপদ ও ক্ষতিকারক তা প্রমাণ করতে প্রতিটি দেশে ‘কোয়ালিটি ক্লিয়ারেন্স’ নেওয়া হয় কোম্পানির তরফ থেকে। ভারতে এর অনুমোদন দিয়েছে এফএসএসএআই। বর্তমানে নানা দেশের বাজার ছেয়ে গেছে ভূয়ো লেবেল-যুক্ত নকল দ্রব্যে। এইকারণে গ্রাহকদের সতর্ক করে কোম্পানির পক্ষ থেকে আসল এমএসজি কেনার জন্য অনুরোধ জানান হয়েছে।
